How do I download the Windows 11 Pro image as the current installation aftering upgrading to 23H2 says it can't be activated. I've searched the website(and forum) but nothing is listed for the S7 model.

Try going back to the previous state, remove the late upgrade you did. And tell us!
Windows 11, version 21H2 reached end of servicing on October 10, 2023 meaning it will no longer receive security updates, so rolling back was not an option.
Update: Trigkey got back to me and have now resolved the issue.
